Within 24 hours of picking, the cherry is run through our pulper, the beans are rinsed and spread to dry on a drying rack in our coffee hut. Only when your order is received on our farm do we mill the dry parchment from the green coffee and roast your bean. By roasting the coffee, we transform the chemical and physical properties of green coffee beans into roasted coffee products by producing a flavor for our coffee by causing the green coffee beans to change in taste.
